Collard greens are a staple vegetable in Southern U.S. cuisine. They are often prepared with other similar green leaf vegetables, such as spinach, kale, turnip greens, and mustard greens in the dish called “mixed greens”.

I just discovered collard greens and really love them- for you non-Southerners, be sure to try preparing them with bits of bacon, chopped red onion, or a little vinegar or sugar, and in other styles.

I love love these greens I rinse cut them up freeze them for my smoothies. Other times I rinse cut cook and eat them. I love them.. boil first, drain save the broth. Sauté garlic in olive oil, then add greens and sauté a bit, then add broth and simmer until tender yummy yum yum
