I ordered a 3 pack of Unha’s fresh udon noodles. There are 3 sealed pouches included and they can be kept at room temperature until being cooked. The product expiration is about 10 months away. They are a very thick noodle, much thicker and more substantial than cheap ramen that many people are likely familiar with. These also don’t come dry but are still hydrated.
I was surprised that the directions said to only use ¼ cup of boiling water to cook a 7 oz package but I’m used to cooking dry noodles. Maybe it’s because I’m not used to cooking this type but the ¼ cup of water completely boiled off or was absorbed before the 2 minutes was up. Since they were never submerged or even had a chance to be stirred around a lot in the boiling water, I added a bit more water and let them cook a little longer. Even after that, they still did not get too soft. They were a nice thick chewy noodle that everyone in my house enjoyed even when plain. Don’t make the mistake of just sprinkling some cheap ramen seasoning on these. They were good in broth or with a spicy soy ginger sauce that I recently got.
I’ll probably cook the rest of them up soon since everyone in my house likes them, but with the long shelf life and short cooking time I could easily take these camping or throw them in with my emergency food. One small problem, but not worth losing a star over, is if you have leftover noodles. They weren’t nearly as good as leftovers as they were fresh cooked. Maybe if we had tried to stir fry them they might have been better as leftovers.

You get 3 packs, each 200g each which is smaller to average size as I am used to the 250g bundles. However it being shelf stable is super convenient and easy to store, especially for those of us with less freezer space. Was so easy to cook as well – just boil 1min 30 and the noodles have great texture, bouncy with good bite. Instructions do say use in broth which I’m sure would have been great but I love a good udon stir fry and it was great for that too. Yum.

I’ve tried a lot of fresh udon and my preferred brands are a very short list. Adding this one since they got everything right. The bag contains three individually wrapped bags. The bags have two tear points which is great, since one tear point often isn’t enough, and since it’s vacuum sealed, can be very hard to get out without damaging the noodles.
I reheat it in a small 3 cup pot where 1/4 cup water comes up halfway its thickness. After 30 seconds I flip it and some of it has already loosened. I apply gentle pressure with a large spoon to help separate but not break the noodles. With enough heat and time it will loosen easily until they are all independent.
Can put anything with it. For a quick, tasty, and nutritious meal I’ll add Hondashi, dried wakame, fish tofu, and frozen veggies. Nice bite and bouncy, neutral flavor as it should be.

Good taste and bounce to the noodles. Normally I end up getting a frozen brand that quick freezes their udon but these have a better overall chew and are quick and easy to cook!

I have never made shelf stable udon before and was a bit skeptical on how this would stack against my normal frozen blocks of udon. I am happy to report that it came out just as good as the frozen stuff. The block seemed a bit smaller than I’m used to, but it seemed to give me a very good amount of udon to make me full. The directions tell you to boil it for 90 seconds, but it takes at least that much time to bloom from its brick. I let it go for about 4 mins and it comes out still nice and chewy, the way a decent udon should be. I will say at the price of nearly $10 for 3, it comes down to convenience for you / ability to get udon locally as well. I would get this brand again if I saw it in store, hopefully for less. It is nice that I don’t have to take up valuable freezer or fridge space which is at a premium, especially in the summer. I added my udon to some leftover Shanghainese chili peppers and beef and just topped it with a spoon of chilli crisp oil. This is one of those pantry staples you definitely need to keep on hand.
