The local store we got this from before has been changed and the new supplies do not include this spice seasoning for our Pho. So it was very nice to find it available.

I bought these to make a authentic Pho. I work in a Thai restaurant and this is the exact brand she uses. I made the soup exactly as she does and it came out flavorless. There is only one thing I did differently. I used the spice bag it came with and she doesn’t. Now I know why. It’s so thick it holds all the flavor of the spices. There wasn’t even a hint of flavor of those spices in a beef broth I cooked for 3 hours. The bag floated and kept a air pocket inside and I should have caught on but I will know now not to use it next time. Use cheese cloth instead. The broth I made was rich and good just no flavor from the seasoning which is a major part of pho.

YES. This is a great spice packet!!!! I toast 1 spice packet (sometimes two depending on how many bones and liquid I have) in a pan for maybe a minute and set aside. I get my large InstaPot, add a few tbsp of EVOO, set my InstaPot on sauté to brown the bones making sure not to crowd the pot which sometimes takes a few times depending on the amount of bones. We have also added lamb bones from a leftover dinner to the beef bones and it was great. Ham hocks would be good also. Once the bones are done browning, I turn off the sauté and I add 2 quartered onions, 6 inches of peeled fresh ginger, 8 cloves of garlic, a tbsp of brown sugar, 1/4 cup fish sauce and a few tbsp of soy sauce then add as much store bought beef stock as I can to the max fill line of the InstaPot which is anywhere between 8-10 cups. I add the spices, close the InstaPot and cook on high pressure for 30 minutes then let the pressure release naturally. Once done, I let it cool down enough to safely handle then strain the liquid through a mesh strainer into a big bowl, cover the full bowl with plastic wrap and stick in the frig overnight to let the fat solidify. The next day I can very easily take off the fat then I am ready to portion into freezer zip lock bags, label and freeze. Fresh pho whenever I want!!!
