Carrots are super crunchy, and they make a satisfying snack with a cup of locally-sourced hummus or almond butter for dipping. Roasting brings out their sweetness, or you might enjoy adding them to a pureed soup with farm-fresh squash and potatoes. Carrots are also rich in vitamin A, antioxidants and other nutrients….

ok.. so what can you say about carrots? I have gotten , old , rotten etc carrots in my life. BUT not these . These carrots were good size 95 percent and no bad ones at all . The taste was perfect . I like raw carrots but also love to roast them in the oven .. slice the carrots the long way place on baking sheet with a bit of virgin coconut oil ( or whatever you use in the oven) pour some maple syrup over the carrots and bake at 375 .. check them at 20 mins and flip over .. check again in 20 more .. if soft enough to your taste then done.. if not let them cook another 5-10 mins or ?? try it if you never have ..

I buy few of them and have them ready in the fridge. One pound is ideal portion for my carrot juice.
I get about one cup of carrot juice from one pound bag which is an expected amount:
Per Wiki page and my experience:
“A pound (454 g) of carrots will yield about a cup of juice (about 236 ml), which is a low yield compared to fruits like apples and oranges”
Sometimes I want to get more millage from my carrot so I cheat the process and I will pour a full 16 oz
bottle of water into the pulp. Let it sit for few minutes, mix it sometimes to help the water to be absorbed
into the fibers again.. add a tablespoon of sugar and then I juice it again.. and voila.. another cup of juice
right there :)… this is not as healthy as pure juice per sugar content but I treat it as my morning coffee,
still much healthier then a coffee and I like my sugar treat.
This bag is also ideal for my all cooking needs, One bag is saved in the veggie drawer and I source it for
all my cooking needs, soups, stews, snacks etc. When I am done to one or two carrots in the bag, time to refill.
Sometimes when I am low on my juicing carrot, I also just grab whatever is left and juice it and
then get a new bag next delivery.
Carrot juicing is really easy to calibrate when they are selling those carrots in respective bags of
1lb
2lbs
5lbs
Because if you need more juice you can easily estimate how many pounds to buy to get how many juice you wish.
As per above, one cup per one pound. And you can mix and match the bags to get to specific cupp-age 🙂
If you want 6 cups you can buy six one pounders, three two pounders or one five pounder and one one pounder
depending on what you find in the store.
KEEPING JUICE IN THE FRIDGE:
The fresh homemade carrot juice will last in the fridge roughly 48 hours, however it does change a bit flavor after the first 24 and can separate visibly which does not mean it is spoiled, you just need to shake it to homogenize it to original looks. Just as you do with fresh squeezed home made orange juice that will separate on you within few hours in the fridge.
The trick people do with juice that they intend to keep up to 48 hours – they add a tablespoon or two of fresh squeezed lemon or lime juice that will help to keep fresh. However I don’t like this tactic as it alters the end flavor so I would much rather make juice daily then keep that long.
MAKING a CARROT JUICE
Is easy and simple. All you need is super simple juicer, best is the one that masticates slowly as oppose those that
go wrrrrrrr zooooooom and give you a fast juice, those unfortunately half boil the juice vitamins in the process and kill precious enzymes so go slow. It still takes no longer then 5 minutes to bring the juicer out, juice a pound of carrot and be done with it.
Consider it part of your morning excursive.
Oh and the good news is, you don’t need to pill the carrots. I know, we all used to do that but turns that the pill has ton of vitamins and good old washing or scrubbing will do. No need to pill. Tastes the same. I am almost positive that store bought juice carrots were never pilled and I have never seen a helathfood juice bars peeling them either.
POSSIBLE CARROT USES:
Soups
Stews
Juicing – pure carrot juice or mixed with other veggies or fruits..
Creamed carrots for your dinner are divine
Carrots and peas mm… good
Snacks sticks, home made just pill and cut make them thin and long
And many more.. just look up what you can make with carrot that is super healthy and delicous.
It has loads of vitamin A, good for your eyes.

I like these carrots because they usually are all very close in size, no spindly ones or overly large & mature carrots which can be flavorless or bitter. They keep well for a long time. Will buy again & again.
