This is excellent salami, probably the best mass-produced salami in the US. I particularly like the Finocchio flavor. Unfortunately, what you get here may have been stored in warehouses and shipped without climate control, which means it is often spoiled or just ruined by sitting at high temperature or in excess humidity. It should not be ordered here until they come up with a better solution to store and ship it with refrigeration.

The best cured meats , like the French saucisson, have a yeast cover which triggers a fermentation reaction , yielding great flavors. Unfortunately, saucisson has to be shipped refrigerated with all the complications it involves. Creminelli has done a great job making a cured meat in a casing which has a lot of great flavors without the inconvenience of refrigeration. I have purchased the wild boar and the standard flavor a couple of times. I am usually very pleased with the quality. I see large differences in fat content from one shipment to the next and I would welcome more consistency there. Overall, a good purchase though.

I used to order salami from Creminelli back when they were still selling it directly and you could order it online from their website. The salami would come sent in a foam cooler box with ice packs. It tasted great and was very high quality. And then they stopped selling directly and started using Amazon. The packaging is different, no cooler packs/boxes, the powder usually found on the outside isn’t there and it seems greasier and less dry then I remember it being. The taste is somewhat different, too. It went from being amazing to just okay. Creminelli, if you changed your recipe, please go back to how it was before!
