This is canned in vinegar. Most Giardinera comes in oil, which I’m sure is the traditional way to do it. I even believe my favorite brand packed in oil tastes better than this one, but I’m trying to cut my calorie intake, so I switched to this. It is not very hot in my opinion, so it’s also a good choice if you don’t like heat.
