I used to prepare stir fry dishes or Asian inspired dishes but they were often missing something. It was fish sauce. I now religiously incorporate fish sauce when making pho, stir fry, curry dishes, etc. It really is a necessity in the kitchen. I cannot find a large size bottle in local grocery stores. Is salty, fishyish, a little goes a long way. Great as a compliment of 1 two in a dish it is called for. Go easy on it (do not measure over you pan, do it into measure spoon over sink!!) and its great!

While some may use it straight as a wet dip, i find it adds a fantastic flavor enhancement to pad and curries. Have watched how its made, used in other dishes. Not a lot of odor fresh, decent slight fishy funk fresh flavor. Just don’t spill on your cloths. It dries and the funk reactivates with body heat.
