I have some trouble with gluten and the rice noodles are a great addition to my diet. The stores around where I live don’t always have the rice noodles so I bought 2 big packs from Amazon. They should last us for a while. Tasty and nutritious. And now I have a little store of them in the pantry!

Easy to fix

Having eaten a lot of different kinds of rice noodles, we found these to be pleasant and agreeable. After boiling them as directed, I tossed them in a light Thai curry sauce. There are a few things to consider:
1. These are round in shape (like a spaghetti noodle) and are about the thickness of regular spaghetti. This makes them thicker than most rice noodles, which means they hold up better to a thicker sauce.
2. There is some fiber present in these noodles, and protein, which means they aren’t just empty starch like most rice noodles. This was important to us since my husband is slightly sensitive to spikes in his blood sugar.
3. Unlike some rice noodles, these noodles are less likely to clump together while cooking (which creates hard parts due to uneven cooking). This is a big plus for us!
4. Two pounds is a lot of noodles. Happily, these do come separated by serving. After removing two blocks of noodles, though, I did have to put them into a ziplock bag as the original package was no longer intact enough to close.

Quality noodles for pho thums up

Great noodles with a firm even texture. Note they are round in shape – roughly size of angel hair and not flat. Easy to cook and don’t need to be ultra precise to get al dente. Sometimes when lazy I microwave them in a bowl with water for 6 min and drain before combining with my broth for noodles soups.

Sometimes I use these rice noodles as an alternative to using rice for stirfry, and always when making Pho.
These are great quality rice noodles.

2 packs. Lots of servings. It can be used to make a versatile dish, as most noodles dishes often can be. I like it. Simple, and one of my favorite type of brands.

These noodles or easy to prepare and held their flavor well. One caveat is that I bought them to make Singapore noodles which is a very thin noodle dish and these are actually a medium noodle so they are a little wider than I prefer. Just a thought if you are looking for very thin noodles that these may be too thick!

Rice noodles don’t really have “flavor”, so I’m laughing that I had to rate that aspect for the review. I wouldn’t expect rice noodles to be anything other than slightly salty. You add the flavors. I use these to make noodle soup by adding turmeric, ginger, green onion, and sometimes I give it a kick with some mustard. It’s my go to favorite when I get home late and I’m hungry! And it’s so much better than instant soup cups that hardly give you any noodles and put all kinds of garbage in the seasoning packets. This makes healthy and satisfying homemade noodle soup. I’ve even made a sort of healthy pad thai with them.

These noodles are really extraordinary! They don’t absorb all of the soup broth in the bowl, and they don’t get mushy in the hot soup (they stay kind of ‘al dente’ no matter how long they sit). Will definitely order these again!
