I tried the blue noodles and I highly recommend to drain the noodles after cooking in the boiling water even though the instructions don’t mention this. I originally was going to keep the liquid it was cooking in as it didn’t say to drain, but pouring the liquid into a white dish, the water turned blue. It made me concerned that this was dye even though not listed on the ingredient list so I drained it.
Taste wise, it is good, does need a a sauce for more flavor though.
Cooks super fast in boiling water and takes only 30-3 min to cook, I cooked it for 2.5 minutes and was easy to eat.

I usually get regular rice noodles, but these were a nice change. The texture is a bit different, but they still work great in soups!

This Vietnamese rice noodle is a perfect staple to keep in your pantry for a quick and delicious homemade meal. My friend is Vietnamese and she introduced me to these noodles. She said, all you need is meat, any veggies and these noodles and you can have a feast! Well, I don’t know about feast but a good meal, yes! She had me cut up some steak into small strips, use a beat of oil and garlic to flavor the meat…sautee quickly. Remove add, some onion, bok choy, scallionsand a piece of ginger and sautee. Remove add soy sauce, oyster sauce and some broth and sautee, add back the meat, then the veggies.
Rinse the noodles and cook 1 minute because you will cook it in the dish more. Saute the noodles and addd to the meat and veggie mixture…you can add a bit of crispy hot oil and toss….
This is a quick way to use the noodles in a delicious dish. FYI! The color of the noodles is just for color, it isn’t different flavors.
Tip…You will need a large baggie to store the extra noodles. The bag they come in is not resealable.

Most of my rice noodles as much thinner, more common in Thai and Chinese dishes, but these were a welcome change. The colors were a little too bright in the package, but a lot of the color rinsed out before cooking. The flavor is good though, still seeming to retain tastes from the different vegetables that helped with that initial coloring.

The noodles smell a little weird coming out of the package (presumably just the mingling of scents from different flavors), but taste fine once fully prepared. Like most rice noodles, these are pretty quick to cook. Each bundle is a lot of individual looped strands, rather than just a couple giant strands, which makes the noodles manageable to both mix with other foods and eat up with a utensil. The plastic pouch these came in was not resealable, so for doing one bundle at a time like I did (each bundle is enough for 2-3 people when mixing with other stuff), you need a spare bag for the remaining bundles.

This is a colorful set of noodles made from various alternative ingredients. The noodles have nice texture and are healthier than traditional noodles. They are very colorful and that may be a good or bad thing. Some might find the color a little off-putting and unpleasant to eat but if you don’t mind the color it’s quite good.

I can’t say I’m a big fan of these noodles. Both the texture and the different flavors seem just a little off to me. The smell was a bit strange too, though that disappeared as they were cooked. They did cook up quickly and easily, and were readily edible. They just didn’t appeal to our tastes. They’re fine, but not good.
I’m not enough of an expert on Vietnamese cuisine to say if there was something wrong with these noodles, or if we didn’t like them because they were too authentic, unlike the noodles we usually get. I can praise them for how well they survived shipping with barely any broken noodles, but I don’t think I’ll be ordering more.

I decided to go with one of the suggestions on the package, and made a vegetable stir fry, and ended up with a lot more leftovers than planned, but it tasted great. I cleaned the pasta as directed, but I drained it and went for another go, as the noodles were coloring the water as if they were dyed, which is not something mentioned on the package. I pretty much figured that would be the case anyways, and the end result still tasted good.
